YIELD: 6 BEEF CURRY
COOKING TEMP: 212F PORTION: 1 cp
COOKING TIME: 1 HR COOKING PAN: SAUCE PAN
INGREDIENTS AMOUNTS PROCEDURES
| Beef cubes lean : 1 1/4 lb 1. Saute onions, garlic and curry in
| Oil : 1/4 cp oil until soft. Add beef cubes and
| Onions chopped : 1 1/2 cp brown.
| Garlic minced : 1/2 ts 2. Add tomato juice, water, sugar,
| Curry powder : 1 2/3 Tb salt and cinnamon. Bring to a boil.
| Tomato juice : 1 1/2 cp 3. Reduce heat; cover and simmer until
| Water : 3/4 cp beef is tender, stirring often.
| Sugar : 1 ts 4. Dissolve cornstarch in cold water.
| Salt : 1/2 ts Add to beef to thicken sauce. Cook
| Cinnamon : 1 ts until thickened.
| Water : 2 Tb 5. Serve over hot cooked rice.
